It ain’t a party ’til the sparkling brûléed grapefruit Palomas show up. So… here’s a knockout (and knock-you-on-your-ass) sparkling brûléed grapefruit Paloma recipe!

I’d hoped to get this recipe out BEFORE Cinco de Mayo instead of ON Cinco de Mayo, but c’est la vie (or whatever that translates to in Spanish). The brûléed grapefruit offers a warm, sugary note to the cocktail, while Fresca gives it bubbles and ginger salt keeps things balanced; these cocktails are the bomb-diggity with last week’s Elote-Style Cornbread Waffles, and work as both a brunch-y treat and a backyard barbecue pick-me-up.

Cinco de Mayo, Mother’s Day, Father’s Day, a just-because-you-need-tequila-day– whatever the occasion, these Palomas are a party waiting to happen.

Sparkling Bruleed Grapefruit Palomas

Total Time: 10 minutes

Yield: 4 Palomas

Sparkling Bruleed Grapefruit Palomas

Ingredients

  • 2 Tablespoons ground Thai ginger
  • 2 Tablespoons ground sea salt
  • 3 limes
  • 1 Grapefruit, halved
  • 2 Tablespoons light brown sugar, separated
  • 8 fresh mint leaves
  • 4 ounces (1/2 cup) tequila
  • 16 ice cubes (or 4 extra-large square cubes)
  • 2 cans Fresca

Instructions

  1. Place ginger and salt in a small, shallow dish
  2. Slice a lime wedge and drag it along the rim of 4 glasses (this allows salt to adhere)
  3. Place glass top-down in salt, moving gently in circular motions until salt coats rim; repeat with remaining glasses
  4. Sprinkle 1 Tablespoon of brown sugar over each grapefruit half
  5. Use a brûlée torch to caramelize sugar (no torch? Place prepared grapefruits in a small baking dish under broiler until sugar caramelizes)
  6. Slice out grapefruit sections and separate evenly into four glasses
  7. Add two mint leaves to each glass
  8. Cut two limes into wedges and squeeze juice into each glass; drop wedges into glass after
  9. Pour one ounce of tequila into each glass
  10. Muddle ingredients in each glass
  11. Place ice cubes into each glass and top with Fresca; stir gently
  12. Garnish with lime wheels and serve
